- Fry light spraying
- 6-8 spring onions , finely sliced
- 2 courgette , cut into 1 cm pieces (Optional)
- 1 red pepper , deseeded and cut into 1 cm
- 1 yellow or orange pepper , deseeded and cut into 1 cm
- 6 eggs
- 3 tbsp finely chopped mint leaves
- 1 tbsp finely chopped flat-leaf parsley
- salt and freshly ground black pepper
- 2 level tbsp grated Parmesan cheese
- Spray a medium-sized , non-stick frying pan with Fry light and place over a high heat.
- Add the spring onions , courgettes ( optional ) and peppers and stir-fry for 6-8 minutes until lightly browned and just tender.
- Break the eggs into a bowl , lightly beat and add the chopped herbs.
- Season well and pour over the vegetables in the frying pan.
- Turn the heat to low , cover and cook gently for 12-15 minutes.
- Uncover the frying pan , sprinkle with with the Parmesan cheese and leave on heat for 4-5 minutes.
- Remove from heat and allow to cool before cutting into wedges .
